Lefse is a delicate and soft Norwegian flatbread. The ingredients are simple, the technique is learned, and the recipe of potatoes, flour, butter, and cream is wonderful. Each piece is cooked on a large flat griddle using special tools, including a long wooden turning stick and a deeply grooved wooden rolling pin.
