Last month Terry taught us how to bake the first of the Swedish cream cakes. This month we move on to the second of the cream cakes she’ll be teaching us: Summer Berry Charlotte Cream Cake. A wonderful and beautiful summery dessert, adapted from the French, this cake features hazelnut ladyfingers for the base. Popular in Scandinavian bakeries, it has layers of raspberry, blueberry, or blackberry mousse, and is topped with fresh berries and whipped cream. This is one recipe sure to wow family and friends, and can be made as either small individual cakes or as one big cake.
