The Art of Lamination Dough: Morning Buns

Ever wonder how baker’s make those delicious, flaky treats—like puff pastries or croissants—that we all know and love? The key is laminating dough – the process of creating layers of dough and butter. Join Farm Table’s pastry chef Sue Nielsen for this hands-on class and learn how to make your own laminated dough! The class will specifically make Morning Buns, a decadent, buttery morning treat that requires some patience, but is always worth the effort.

Sue Nielsen is Farm Table’s very own Pastry Chef and Preservation Manager! She has honed her culinary skills for over twenty years. Her particular passion for pastries and desserts, both sweet and savory, led her to pursue an A.A. degree in Pastry and then a B.S. in Hospitality Management, both from The Art Institute International of Minnesota. Sue won the “The Beez Kneez” 5th Annual Dandelion Pastry Challenge in March of 2018, in collaboration with Café Wren. When not baking, preserving, or teaching, Sue enjoys snowshoeing, canoeing, biking, reading, raising goats, and teaching herself to play the Native flute. She also enjoys spending time with her family and friends.

SATURDAY, FEBRUARY 6 join Bonnie Warndahl of Winnowburrow Farm in her home—virtually of course—to take a tour and learn about creative ways to “garden” indoors and invigorate your space with flowers and live plants.
