Seasonal Spring Roll Salad

Salad Ingredients

  • 1 cup cooked rice vermicelli noodles
  • 3/4 cup of any combination: fresh matchstick carrots, hakuri turnips, cucumbers, snap peas
  • 1/4 cup Thai basil leaf
  • 1/4 cup mint leaf
  • 1/4 cup cilantro
  • 2 tablespoons crushed toasted peanuts
  • 1/8 cup green onion  
  • Optional: dried Thai chili

 Dressing Ingredients

  • 1/4 cup brown sugar
  • 3 tablespoons rice vinegar
  • 1/4 cup lime juice
  • 1/4 cup fish sauce
  • 4 cloves fresh garlic
  • 1 inch of fresh ginger root
  • 1 tablespoon tamari

Prepare Salad

  1. Combine rice noodles, vegetables, and herbs in a bowl.
  2. Toss in 1-2 ounces of dressing, to taste.
  3. Plate salad and garnish with additional herbs and toasted peanuts.
