Salad Ingredients
- 1 cup cooked rice vermicelli noodles
- 3/4 cup of any combination: fresh matchstick carrots, hakuri turnips, cucumbers, snap peas
- 1/4 cup Thai basil leaf
- 1/4 cup mint leaf
- 1/4 cup cilantro
- 2 tablespoons crushed toasted peanuts
- 1/8 cup green onion
- Optional: dried Thai chili
Dressing Ingredients
- 1/4 cup brown sugar
- 3 tablespoons rice vinegar
- 1/4 cup lime juice
- 1/4 cup fish sauce
- 4 cloves fresh garlic
- 1 inch of fresh ginger root
- 1 tablespoon tamari
Prepare Salad
- Combine rice noodles, vegetables, and herbs in a bowl.
- Toss in 1-2 ounces of dressing, to taste.
- Plate salad and garnish with additional herbs and toasted peanuts.
